Meet the Team Monday: Executive Chef Anthony De La Rosa

Millions of people have indulged in his work, but few can say they’ve seen the man behind the masterpiece, or plate, in this case.

For the Hyatt Regency McCormick Place, the creative vibe running through each of our newly configured dishes comes at the hands of our Executive Chef Anthony De La Rosa who has been behind the scenes at the hotel for over eleven years!  Now it’s time to meet the man behind the apron.

His career with Hyatt Hotels began in 1990 soon after he graduated from Washburne Trade School’s Culinary Program.

After graduating, De La Rosa, or Chef as well call him, immediately started working as a breakfast cook for Hyatt Hotels at the Hyatt Suites on Chicago’s Michigan Avenue.  He also supervised Jaxx, which served as the location’s fine dining restaurant.

In 1992, he transferred to San Antonio to open the Hyatt Regency Hill Country where he again found his niche in fine dining. He ran the hotel’s restaurant until 1996 when De La Rosa returned to Chicago.  He became the Executive Sous Chef at the original Park Hyatt Chicago where he stayed until the property was closed to change locations in 1997.

De La Rosa then took the position as Executive Sous Chef at the Hyatt Regency Chicago. He remained at the flagship property until the year 2000 when he returned to the Park Hyatt in it’s new location as we know it now next to the historic Chicago water tower.  He opened the Park Hyatt’s now famous Nomi Restaurant and Lounge.

Chef found his home with us in 2002 as Executive Chef overseeing all food preparation for Shor, Forno, Mx Lounge, Daily Grind Market, and over 30,000 sq ft of meeting and banquet space.
